Grilled Purple Cabbage Slaw

1 head purple cabbge, quartered and grilled 
1/3 cup vinegar
1/4 cup fish sauce (optional) 
1 teaspoon salt (more salt if fish sauce is omitted)
1 tablespoon sugar 
3 tablespoons toasted sesame seeds
3-4 red Thai chilies, chopped 
1/2 cup scallion greens, thinly chopped

Chop grilled cabbage and place in a bowl. Add vinegar, fish sauce, salt, sugar, sesame seeds, Thai chili, and scallion. Adjust seasoning as needed and mix well.
